Abstract. Hospitality is a noble feeling which requires a place to receive people: the hotel. Hoteliers must create a peaceful and welcoming atmosphere, in which the human relationship can freely be transparent and satisfying, inspired by the ethical values of sustainability. The Italian tourism industry has been adapting its offer, establishing principles, and spreading the typical rules of “green hotels” for almost 30 years. Over time, voluntarily ethical codes and non-financial statements are spreading and demonstrating an increasing focus on sustainability. This paper describes some remarkable and emblematic Italian experiences concerning ethical codes and sustainability reports of a phenomenon that is expanding everywhere, also thanks to the UN 2030 Agenda.
